Meatloaf Ingredients:

- 1 lb ground pork
- 1 lb ground beef
- 2 medium onion, diced
- 1 egg
- 1 3/4 cup breadcrumbs
|
- 1 1/2 tbsp Nirmala's Kitchen West Indies Curry powder
- 2 tbsp parsley, chopped
- 2/3-cup milk
- 1/4 cup water

Meatloaf Directions:
|
- Combine all the ingredients well, shape into a loaf and place
in a baking dish.
- Bake in a pre-heated 375-degree oven for 1 hr 15 minutes.
- Pour the tamarind sauce over the meatloaf after 30 minutes of
cooking, them continue cooking for the remainder 45 minutes.

Tamarind Sauce Ingredients:
|
|
- 2/3 cup water
- 2/3 cup tomatoes sauce
- 3 tablespoons tamarind pulp
- 1/3 cup brown sugar
|
- 2 tbsp of red wine
- 1oz butter
- 1/2 tablespoon lemon juice
|
|
Tamarind Sauce Directions:
|
- Bring all ingredients to a boil and allow to simmer for 5 minutes.
- For a truly American and West Indies fusion, serve with Garam
Masala mashed potatoes.
