Mr. Komalat's Massaman Beef with Jasmine Rice
 
Serves: 4
Ingredients:
 
  • 1 lb lean beef, cut into 2 inch cubes
  • 2 cups coconut milk
  • 2 small potatoes, cut in 1-in squares
  • 1 tbsp vegetable oil
  • 1 whole bay leaf
  • 1 tsp Nirmala's Kitchen Ground Cumin
  • 3 garlic cloves, chopped
  • 1 medium shallot, chopped
  • 1 tbsp Nirmala's Massaman curry blend
  • 3 kaffir lime leaves, julienne
  • 1 tbsp lemongrass, sliced (white part)
  • 1 tsp Nirmala's Kitchen Wild Fire Blend
  • 1 tbsp fish sauce
  • 1/2 cup beef stock
  • Salt to taste
Directions:
  1. Combine garlic, shallots, lemongrass, lime leaves and spices, add a touch of coconut milk and blend into a paste. Heat oil in a pan; saut_ mixture, stirring until it is fragrant.
  2. Slowly add beef, making sure it is well coated with spice mixture.
  3. Pour in remaining coconut milk and add bay leaf. Bring to a boil, cover, and cook for 35 minutes or until beef is tender.
  4. Add potatoes, fish sauce and beef stock. Cover and slow cook for 10 minutes over low to medium heat.
  5. Serve with Jasmine rice.
