Mr. Komalat's Massaman Beef with Jasmine Rice

Ingredients:

- 1 lb lean beef, cut into 2 inch cubes
- 2 cups coconut milk
- 2 small potatoes, cut in 1-in squares
- 1 tbsp vegetable oil
- 1 whole bay leaf
- 1 tsp Nirmala's Kitchen Ground Cumin
- 3 garlic cloves, chopped
- 1 medium shallot, chopped

- 1 tbsp Nirmala's Massaman curry blend
- 3 kaffir lime leaves, julienne
- 1 tbsp lemongrass, sliced (white part)
- 1 tsp Nirmala's Kitchen Wild Fire Blend
- 1 tbsp fish sauce
- 1/2 cup beef stock
- Salt to taste

Directions:

- Combine garlic, shallots, lemongrass, lime leaves and
spices, add a touch of coconut milk and blend into a paste.
Heat oil in a pan; saut_ mixture, stirring until it is
fragrant.
- Slowly add beef, making sure it is well coated with
spice mixture.
- Pour in remaining coconut milk and add bay leaf. Bring
to a boil, cover, and cook for 35 minutes or until beef
is tender.
- Add potatoes, fish sauce and beef stock. Cover and
slow cook for 10 minutes over low to medium heat.
- Serve with Jasmine rice.
