Quinoa was referred to as the “Mother of all Grains” by the Incas, who survived on this food for thousands of years. These edible seeds, which are rich in amino acids (protein), have a fluffy, creamy, slightly crunchy texture and a somewhat nutty flavor when cooked. Cooking quinoa is simple. Cook it like you would rice: Bringing two cups of water to a boil with one cup of quinoa, cover at a low simmer, and cook for 15–18 minutes or until the germ separates from the seed.

It is one ingredient I did not add spices to, as its cooking possibilities are endless. It can be used as a morning cereal or savory side dishes. Quinoa is also gluten-free.

For many years, I had only brought Quinoa into the United States in large containers, mostly for restaurants and private-label companies. In my recent cookbook, Nirmala’s Edible Diary, there is a recipe for a Turkey Quinoa Meatloaf, which is absolutely delicious and is all protein.
