“Tandoori” refers to foods cooked in a tandoor, or clay oven. “Masala” means a mixture or blend of spices. Tandoori also refers to the traditional marinade used in Northern India in the Punjab region. Today, almost every Indian restaurant in every corner of the world has a tandoori oven. Blend our Punjabi Tandoori Masala with yogurt to create a marinade for chicken, fish or lamb. Our tandoori blend also makes an excellent dry marinade for meats that are to be pan-fried, grilled, roasted or barbecued.

This is a blend I learned how to make in Amritsar in the Indian state of Punjab. This is one of my favorite Indian spice blends. Each time we blend it in the warehouse, part of the first batch is used to make a Tandoori dish. We love the sunset color it gives to the finished dish, and when cream is added, it’s a lovely pink.
