There simply is no substitute for quality saffron. This rare and most expensive spice is truly unique. It requires a labor-intensive harvest—all done by hand, and it takes thousands of these tiny strands to make just one ounce. Saffron is the dried stigma (tiny thread-like strands) of the Crocus Sativus, which is in the family of iris plants. It is an essential ingredient in a wide range of traditional dishes, perhaps one of my favorite ways to cook with saffron is with rice for, rice pudding, biryanis or a paella.

One of my favorite places to travel for spices is the Jammu & Kashmir region of northern India, where we get our premium saffron. Apart from being one of the most tranquil places on this planet, the region speaks to me in many ways. It has astoundingly beautiful landscapes of streams, valleys and the Himalayas, which seem just a hand’s reach away. Its food and culture are so familiar to me.
