Bush tomatoes are actually berries, a bit smaller than cherry tomatoes. Once sun-dried, they become dark brown with a fruity caramel-like flavor and a slight tangy acidity. Australian bush tomatoes taste like sun-dried tomatoes with hints of raspberries.
Use our ground bush tomato to flavor casseroles, beef stews or wild game. Or use on focaccia, antipasto and chutneys. It also works well as a coating for grilled fish, such as salmon or tuna steak.

I am always on a quest to re-kindle many childhood adventures. I spent summers with the natives of Guyana, the Arawaks. They taught me of many ingredients they survived on in the rain forest. As an adult, my passion for dwelling with natives and what they eat, lead me to the Torres Strait Islands between Australia and New Guinea. That is where I discovered wild herbs, fruit and spices that the Aborigines have been using for thousands of years, which lead to several expeditions to the unique terrorities of the land down under.
My quest for bush tomato led me to the Northern territory, where it’s hand-picked by the aboriginal people, just as they have been doing for thousands of years.
