Indian Ajowan Seeds
Similar to cumin or caraway seeds in appearance, ajowan seeds are grayish-green seeds that have stripes
and are curved, often with a tiny stalk attached. It's also known as bishop's weed and carom. In its raw
state, its flavor is hot and bitter, leaving your tongue numb for a while. However, cooking it mellows the
flavor; when crushed, they have a strong, distinctive thyme-cumin-like fragrance. It complements flat breads,
potatoes, green beans and root vegetables.
