Ah, saffron. I've escaped death many times in my travels, but came close to it looking for these darlings in the Atlas Mountains of Morocco and in the disputable region of Kashmir. Saffron's fragrance is wonderfully rich, pungent and floral with a hint of honey and a very pleasing flavor. However saffron's aromatics can differ slightly, depending on its origins; that's why I am offering the best I found from my travels.

I prefer to use saffron from Kashmir for desserts because of its bright burgundy color and long, firm strands, and I use saffron from Italy and Iran in my savory dishes such as paellas, risotto and soups.
