Orissa Long Pepper Orange Salad

Serves: 4-6

Ingredients:
|
|
- 4 medium oranges, peeled, pitted and sliced
- 1 small red onion, thinly sliced
- 1/2 cup thinly sliced fennel bulb
- 1 Nirmala's Kitchen Orissa Long Pepper
|
- 2 teaspoons Nirmala's Kitchen Cumin Seeds
- 1 tablespoon julienne mint, plus more for garnish
- 4 tablespoons truffle oil or extra-virgin olive oil

Directions:
|
- In a large bowl, add the orange, onion, and fennel.
- With a small nutmeg grater, shave one Indian long pepper over salad, add cumin, mint and truffle oil, lightly toss and cover with plastic wrap and let marinate in cool place for about 1 hour.
- When ready to serve, garnish with fresh mint leaves.
