Indonesian-Style Spicy Peanut Sauce
 
Makes about 1 cup
Ingredients:
 
  • 1 tablespoon vegetable oil
  • 1 teaspoon minced garlic
  • 1/2 cup ground unsalted peanuts
  • 2 teaspoons red pepper flakes
  • 1 teaspoon fish sauce or shrimp paste (optional)
  • 2 tablespoons tamarind pulp or juice
  • 1 tablespoon plus 1 teaspoon sugar
  • 1/2 cup coconut milk
  • 1 teaspoon salt
  • 1 tablespoon freshly squeezed lime juice
Directions:
  1. Heat oil in a medium frying pan over medium-high heat. Add the garlic and sauté until soft, stirring frequently, about 1 minute.
  2. Add the remaining ingredients, stir and bring to a boil. Remove from heat and set aside to cool.
  3. The sauce can be stored in a plastic airtight container in the refrigerator up to 2 days.
