Indonesian-Style Spicy Peanut Sauce
Makes about 1 cup
Ingredients:
1 tablespoon vegetable oil
1 teaspoon minced garlic
1/2 cup ground unsalted peanuts
2 teaspoons red pepper flakes
1 teaspoon fish sauce or shrimp paste (optional)
2 tablespoons tamarind pulp or juice
1 tablespoon plus 1 teaspoon sugar
1/2 cup coconut milk
1 teaspoon salt
1 tablespoon freshly squeezed lime juice
Directions:
Heat oil in a medium frying pan over medium-high heat. Add the garlic and sauté until soft, stirring frequently, about 1 minute.
Add the remaining ingredients, stir and bring to a boil. Remove from heat and set aside to cool.
The sauce can be stored in a plastic airtight container in the refrigerator up to 2 days.
