Native to the Moluccan Islands of Indonesia, cloves are the unopened flower buds from the tree of the myrtle family. The flowers grow in clusters, and the buds are greenish-pink and become red as they mature. The clove buds are then harvested and sun-dried for four to five days, hence the brown color. The pungent yet fruity flavor marries well into meats, spice rubs and desserts.
