Asian Peanut Sauce
Makes approximately 2 cups
- In a coffee grinder, grind peanuts until finely chopped.
- Heat oil in pan in medium heat; sauté shallot, garlic and chili for 2 minutes; add turmeric, curry powder and cumin, and cook for another two minutes.
- Add coconut milk and stock, and whisk in peanuts; add lemon juice and sugar and reduce heat to a simmer. Cook for 5 minutes or until slightly thickened. Serve with one of these recipes Malaysian Chicken Satay or Coconut Ginger Chicken Tenders.
