Matcha is the powdered green tea leaf used in the traditional Japanese tea ceremony. The stems and veins of fresh green tea leaves are removed and ground into a fine powder using an ancient stone mill. Matcha and other green teas are said to contain naturally occurring compounds called polyphenols that have powerful antioxidant properties.
